because unlike you I need a flight and hotel as well and somehow I need to keep cost in an acceptable range
If everyone brings two bottles we won't be finishing most of them and that's a waste. I say we get some better bottles and don't overdo the #s; just my 2 cents.

Agree. ^

I can't be the only one here who it pains to see the FAs dump bottles of Krug or Dom down the drain at the end of a flight. Let's not let that happen to us at WineDo!

A NV Ayala Majeur Brut was recommended to me for this event. What say the Experts here?

Unlikely to occur. At most WDs there aren't much more than a few kibbles and bits from the variety of bottles. At this one, I would expect that there will be less, if any, as there won't be any heavy reds to affect the ease at which the bubbles go down!

I cancelled the Waldorf and will be staying at Hilton Garden Inn New York/Manhattan-Midtown East. Much cheaper, I forgot about that hotel, I stayed there for BRT earlier this year. Well run for a new hotel

Since we're not experts, don't expect an answer.

I checked this out on Cellartracker. You're good to go. ^
