Park Hyatt Sydney is a special property in a great location.
There are excellent Hyatts in Tokyo, but I think you have already booked a hotel there?
Paris has the exquisite Park Hyatt Vendome.
The new Park Hyatt Vienna is supposed to be very special in a superb location.
Munich City Hilton has a very convenient location over a subway station that you can reach on a straight line from the airport.
Perhaps you could list where you'll be on weekends?

Conrad Bangkok is lovely, and two of your four nights there are on a weekend.
Lots of folks like Conrad Bali. (I prefer to stay in Ubud.)
Conrad Tokyo is a wonderful property.
Regarding your Chase points, in general I prefer to use Chase for airline points. But if you are set on using them for hotel points, you'd get more worth moving them to Hyatt than Marriott or Interconti. They all move 1:1, but in general, there are lower point redemption for Hyatt.

I booked The Amala in Seminyak (Bali)
Conrad Tokyo would have been nice too if it wouldnt have been fully booked
Would Conrad Bangkok be a good use for those certificates?
The Vienna Hyatt does look nice and i would only need 25k points per night ..

you cld always consider paying IHG $200 for Ambassador, and getting a free weekend night, plus all the benefits, pays for itself, there are also very reasonable trades going about, Coupon Connection, The Exchange, on MilePoint, and elsewhere for the standard 5K point code, which in $ terms equates to $35, if you book, and cancel, that's what the IHG points amount to, .007, so any Fri/Sat or Sat/Sun night stays, you halve your cost with the free night. Middle East weekends inc Thurs/Fri/Sat
