incidentally has there also been a change to the long haul F staple ? i saw on a recent F menu (in our menu thread) that it's now called Caviar and Fine Salmon. instead of balik salmon and tsar nikolaj or something.

For US and Canada it is always fine smoked salmon. Other routes they can source the balik salmon

I flew F from LAX to HKG the other day and it clearly stated local salmon and yes they changed the regional champers but who cares. We boarded at 7 15 am for a 7 30 flight and the cabin manager made sure we all knew it was christmas eve and we had lots of fruit and champers on our flight.

She also told me that due to the fact her shifts had landed her working christmas eve and then off to LAX boxing day she was going to do all she could to have a good time with her passengers.

The bottle of Henriot I consumed yesterday HKG-BKK was lovely... for a 10 am flight, I found it smoother and less acidic than the Billecart.

I just check my menu collections dating back to 2000 and def no balik salmon for all US or Canadian ports and it is just fine smoked salmon. You got mixed up from ex HKG to US and Canada where they serve balik salmon

Yes you are right. I never reallly noticed the discrepancy. Goes to show my very unrefined salmon palate. Do you know if there difference in the caviar as well or has Tsar Nicolaj (sp?) disappeared for a while too ?

Actually they don't specify the caviar anymore, it is French farmed.

I need to get the brand next time.

I love balik salmon, but CX does a good job ex North America as the salmon looks almost like balik?
