Need basic help with trip Toronto to Quebec City

To get more comment, or to help others...here is what we plan to do starting in a week.
Fly SAN to YYZ and continue on to YQB that same night. We will arrive an hour before midnight. Taking a cab to Le Saint-Pierre Auberge Distinctive, near the gates and the port. The hotel offers breakfast, elevators, 31 rooms, robes and they will see to your bags getting to the ship, leaving you to stroll down to the ship.
Day one will start with checking in and going to sleep. Up at 8 AM? We plan to do a walk about today. Palace Royal (Musee). Norte Dame des Victoires Church, Maison Historique Chevalier, Musee Civiliation, Old Port, buy some wine and get a subway for dinner back at the hotel! May have to save some, as this may prove too taxing.
Day two we will do the hop on/off bus, skipping the Observatory, but doing the Jardins Jeanne d'Arc/Battlefield Park, then off to Musee du Fort. We will check out the Chateau Frontenac, statute, fountain and street entertainers. We might then do the Citadelle de Quebec. The bus adds a 90 ride with commentary that we would miss by walking the above.
Day three we will do the Falls. Not sure yet if we will try the buses so we can spend a longer time at the falls or do the tour of the falls etc on a half day. We will talk to the concierge at the hotel. We would like to do the bus on our own, if it is not too complicated from our hotel.
Day four we get on the ship, but it will stay in Port.
Day five the ship is still in Port, but we do not intend to do a ship sponsored tour. We will get off and do what ever we missed from our original plan, and anything we find out about during our visit that we "must do". The ship departs that afternoon.
Thank you again for your help. We will return to Toronto at another time and spend a week or so there and route in somewhere else too.
