What would a walk from Yaletown along Beach Ave/those beaches to Stanley Park be like? How long? Are you walking alongside a lot of cars? Better just to rent a bike?

Well, depends how far into Stanley Park you want to go. You'll be walking along the Seawall, a pedestrian/cycling path that runs along the water's edge. From Yaletown to Second Beach is probably an hour to an hour fifteen. I'd allow 90 minutes to Third Beach.
No, there are no cars on the seawall, just pedestrians, rollerbladers, cyclists and the odd skateboarder.
You could, but if you wanted to continue around Stanley Park you'll be going in the 'wrong direction.' The cycling path on the Stanley Park portion of the seawall is one-way, counter-clockwise, in the Stanley Park sections.

I just visited Vancouver. But my planning didn't allow any decent time to see things. I have to fix that next summer. What time I did spend, the weather was ideal. Not many places on the continent can make that claim in July. I told my niece and her husband they live in my vision of Paradise. They didn't really contradict me.
