I don't think Champagne has ever been advertised as being available in CW/CE/Terraces lounges; it's only those of us who know it's available on request that seem to ask for it.

Lots of the lounges appear to be quite separated in places - especially in Galleries FIRST and the Concorde Room - there seems to be automatic glass doors...what's this for...noise?

There are doors (and glass walls) between the terrace area and the main lounges for the CCR and F lounge. The F and J lounges also have glass parititions to break the space up - Galleries south also has some fab Imperial and BOAC memorabilia.

It looks like the CCR and Galleries F are on the same level as the departures area, and that Galleries Club is one floor up?

Yes, the " terrace areas" are internal to the terminal building.
The lounges, sorry , " Galleries " , look very impressive.
PS Where is the spa?
