Can I change the date of my return after I have flown the outbound leg?

Yes, but all you will get back is possibly some taxes, no Avios refund.

"Always" is too absolute. It depends on the trip. There are pros and cons to each approach.

Two more:-
  1. You could pay more in TFC than if you booked one round-trip.
  2. If you have to cancel or change the entire trip, you could have to pay 2 x £35 rather than 1 x £35.
