I am looking to redeem my EC miles for a flight in F or J from LHR to SYD sometime next year. The problem that seems to have popped up is that there is not one seat available for the first 8 months of 2013! Is this normal?
Yup fairly normal. Try QF to HKG and CX from HKG, or via PVG
Unfortunately, I need to go on BA metal to use my companion voucher. Believe me, I would love to go with QF over BA but it doesn't look like it's going to be a possibility for us.

Of course there is always availability a week out for Sydney and SIN. It's the other 51 weeks in the year that are the problem- a problem that does not exist for CX, AY, QF and JL apparently.

It's perfectly normal and won't change except for last minute trips as pointed out. If you have so many constraints (want j or f, want ba metal, want to use companion voucher) you are better off thinking of some other routes as very few are as limited for (particularly premium) awards.
I managed to get reasonable dates for a 241 trip in F to SYD about 11 months out, although I had to book a dummy return first and check dates as they opened up every morning. I have ended up with 12 days in Australia, which is ok, if not perfect.
This year, I used my voucher for BA F to HKG and then redeemed Avios for CX J. A more expensive way, but I got the trip I wanted, which was the most important thing. I had to break the journey to SYD with two days in HK on the way out, due to availability, which was fine, even though it was not as I had intended. I enjoyed a relaxing stay at the IC in Kowloon.

Thanks to everyone for the information, much appreciated! I tried using the stopover feature in the booking software and that popped dozens of itineraries (leaving the same day, I might add) but by doing so it ate up double the Avios per person.
Would there be any better luck with the agents over the phone?

Basically book whatever class is available, even Y and then upgrade each sector as seats open up
