I've got an I class ticket and I know that theres a lot of restrictions on it, can't upgrade, can't change date/time of flights and can't cancel. BUT does anyone know if there are any ways around it so that I could cancel without losing the whole/large sum of the fare that I paid for it?

It wouldn't be a restricted ticket if there ways around getting your money back
Remember to cancel the ticket though, and not just do a no-show, because that way you'll at least get the taxes refunded, which is better than nothing.

The Taxes are always refundable whether Voluntary Cancellation or No Show.
Restrictions depend very much on market/point-of-sale. There are similarly 'lax' restrictions from e.g. the Gulf.
ex-UK, you have to spend considerably more to get any kind of flexibility, e.g. LHR-JFK-LHR I return is c. GBP2400, R return is nearer 4k with a GBP200 change or cancellation charge.
You can change the dates for a fee of 300 I think, and any fare difference, so if I is available you just pay the change fee. Also you can upgrade with avios if available F there. I have done this on numerous occassions.

When I rang BAEC to ask about changing the inbound flight, I was told that with the booking being an I class, I wouldn't be able to change it. Wasn't even offered to pay a fee or anything, just a straight out no.
