5* hotel in BKK...what to bid on Priceline?

What should I estimate spending on a 5-star hotel in Bangkok when bidding on Priceline?

Will need one room with two beds for three adults, Dec 4-8.

Did you check some of the travel bidding websites?

www.biddingfortravel.com shows the Westin and/or Sheraton Sukhumvit going for ~ $90-ish USD recently.

When grabbing reservations in this way does it normally preclude earning any loyalty points/stays?

Usually, yes, but YMMV. With some chains you may get miles or points, with some only for extras.

Remember that with priceline - although it's probably not a problem in Asia - you are only guaranteed a room for 2 people.
