I am thinking about using the Avis First Free Weekend coupon except I will be getting in 12:01 AM on Sunday. The rule says "Saturday Night is required" and the system rejects it if I use Sunday 12:30 AM as the pickup time.
What I wonder is: if I put 11:30 PM on Saturday as the pickup time and get there late, what will happen?
Can they / would they manually override the system to take the coupon?

Can they / would they manually override the system to take the coupon?Yes, and maybe. I would consider your rental a valid use of the "Saturday night required" coupon, but I don't think the Avis computers agree with me.
AFAIK (based on rentals I had earlier this year), Avis computers will consider an 11:59PM check-out to cover a Saturday night requirement and a 12:01AM check-out to not.
YMMV. It very much depends on both the station and who is working it. My experience is that if you are Preferred, arrive at Avis at 12:10 and just jump into your car & drive away, they will mark you as Out: at something like (Sunday) 00:43. When you return the car, the coupon from your reservation will not be credited on your receipt. You can then go in and plead your case since the coupon will still be in the contract (you may likely find a willing agent that can alter your "out" time to fix the "computer problem").
You can do the same on check-out (try to have them override the "out" time to be just before midnight). Only issue is I see is that the late people seem to be always in the extremes, either very cranky/nasty or extremely nice/helpful. So my guess is you will find out in the first three seconds how it will go.
