Did do a search for this..(honest)
How to I book see fare on CX.com that I can use for UG? I'm sure I saw this once but can't seem to be able to do it now. Looking for LAX-HKG from US site.

It shows the booking class at various points in the booking process.
However, there is no way to specifically choose an upgrade eligible class. You must either call CX or go through a TA.

Either I'm going crazy or I did a search a week or so ago and saw a fare table with Economy Restricted, Economy Less Restrictive, Economy Flex etc.....

After "Select Dates", you will be on "Select Flights". On the top, you can select "Economy Core" or higher, I believe, for upgradable fares.

And if you click on any of those fares, it will pop up a window telling you whether or not the fare is upgradeable.
After you select "Economy Core," "Economy Flex," or what not, and select your flights and hit CONTINUE, on the next window it will show a summary. On the very right-hand column, the category is "Fare Class." It will say "Economy Core," etc., and the letter in the parentheses is the Fare Class.
In order to upgrade from Economy to Business, the Fare Class must be either Y, B, H, or K. Y or B should pretty much always be available, and either H or K usually is also. If the cheaper upgradeable fares are not available, try calling CX reservations or your travel agent and they may be able to get certain fares for you.
I believe that for Business to First upgrades, any fare class is eligible, although I'm not 100% sure about this. Can someone more knowledgeable confirm?

Yes. All "revenue" booking classes for business (J,C,D,I) are all eligible for upgrades.
