I'm a UA *G flying TLV-IST-JNB on 7/25 with an 1hr, 35 minute connection time. I know this is very geeky, but i'm a passport stamp collector and wondering if I have time to clear immigration (I don't mind buying the Turkish visa) with my stated connection time?

35 minutes seem to be way too tight. You will be arriving in IST in the middle of a chaotic hour so I would say no chance... A few weeks ago, I arrived in IST at around 22:00 and the airport was packed...
As WoW says, you will be arriving on a very busy period. Most of the european flights are arriving during that time. So the passport control would be packed. Then you need to rush to departure terminal (upstairs) and pass the passport control again. You could make it. Tightly.
Just be sure that you have your IST-JNB boarding issued and with you. Otherwise you cannot pass the passport control out of Turkey.
The flight will wait for you anyway till they off-load your luggage. After the offload, you will lose all rights to that flight. No compansation, no re-booking...

If you are on TK business class, you can use the fast-track immigration desk at the far end of the hall, which is usually very fast indeed.

Even when I fly TK in coach, the check-in staff at various EU airports often give me a fast track pass for IST as a Star Alliance Gold customer.
