Haven't seen about the buying extra seats on transpacific on the site.
Can you predetermine which flights would have low loads?
Does NZ seat in any special order so that you could actually get three seats together?

...and what happens if someone in the aisle seat opposite your 3 seats decides to nip across into the spare seat shortly after takeoff whilst you are gazing out the window? How is this squatting resolved?

IIRC no extra status points or airbucks for purchased extra seat.
Low loads can be seen from fares on offer (actually not such a good indicator as NZ seems to be willing to sell discounted fares on day of departure on some longhaul flights even when there are only a few seats left), and availability tools. Seatmaps are not a good indicator.
I've been given rows of 3 or even 4 on lightly loaded flights, without paying.
Sit in the aisle seat to prevent poaching.
