Korea - Is 3 Days in Seoul Worth the Stop?

My husband and I are flying from LAX to ACK via ICN. It's a pretty long haul so we're considering a 3 day stop-over in Seoul on the way home. I know that's not nearly enough time to see Seoul or the rest of South Korea, but it seems ridiculous to just land at the airport and leave, especially since we've never been there. The kinds of things we enjoy while traveling are local history and religion, street markets, local foods, etc.
So flytalkers, what do you think? If we spend 3 days there, what should we see and do?

Seoul is a beautiful city. Aside from the culture and history, great shopping and food. I would definately recommend at least 2 days there.

Seoul is a fantastic city and I've only been once. I would strongy urge you to take advantage of the 3 days stopover. Heck I would have urged you to taken even a 1 day stopover

Get some travel guides & enjoy the clean friendly
city that has great public transportation that is
easy to navigate by the numbers (our numbers)
Signage in English is sparse but sufficient and the
food is wonderful and accesible
Center of the city (I stayed at Seoul Plaza) with
the park in front of City Hall & the Doek Su grounds
across the street are someplace to see especially on
whatever day the do the elaborate changing of the
guard (from century to century) with large groups
of brightly colored costumed participants with flags
& drums and much fanfare
You will be glad you went

Yes. Seoul has wonderful museums and good food.
