Just passed through ICN twice in the last two weeks. Two really fun things to do if you have even a short amount of time:
1) The Korean Cultural Heritage Foundation offers foreigners the chance to make really cool authentic crafts for free. They are located beside gate 24. The women manning the cultural area wear traditional costumes, teach you how to do the crafts and also will answer questions about culture. Mr. Cellist and I made a traditional paper covered tray. When complete they gave us a nice cloth gift bag for it.
2) There are transit tours available. While the Seoul tour is heavily advertised, there are also much shorter tours available if you don't have enough time for this one. We took an excellent tour (1 hour) to a local buddist temple as well as a 2 hour trip to a shopping "mall" akin to a Target in the U.S. (plus all kinds of exotic food). The temple tour was free when we went through, the mall was about $10 per person.
