Mexico - Looking for All-Inclusive with good Mexican food

Subject line says it all. I'm not usually an AI traveler, but going with people who seem to think this is a good idea. We're UK-based, but love authentic Mexican food (have traveled throughout Mexico fairly widely). I can't imagine spending time somewhere there with bad food, particularly bad Mexican. Any suggestions?

Not necessarily. This is a trip visiting with friends, and mostly planned as a lazy trip, rather than any sightseeing or external activities necessary.
Iberostar resorts offer very good food and accommodations.
