Flight from Little Cayman to GCM arrives at 12:20pm. Flight out to Miami departs at 2:25PM. Will this allow enough time? Our other option is arriving at 9:35AM and sitting 5 hours which we would like to avoid :)

You have enough time to go to the beach and back. Don't sweat it. There is a restaurant landside (upstairs) which has reasonable lunch choices. Airside there is a bar only (with snacks) along with a collection of duty free shops.
