We have 4nts/5days via Syd. Looking to rent a car and explore the areas.
Looking for a 4-5* hotel in Hobart- as our base camp.
discovertasmania.com has been really incredible for ideas.
would prefer: less touristy, botique, quiet, bkfst inc. Pushing it for gym/hc with pool, or atleast steam/sauna and jacquizzi to recover from long days of exploring and walking.
I also belong to Radison, BW, iPreferred, IC (holidayinn), Accor. But where there's one in Hobart, they look really 1-2* tourist, and worn.

It is central to everything though do not have a pool. Easily the best hotel in Hobart.
Ok, no real chain names in Hobart. Henry Jones is GORGEOUS..no pool, but most of the rooms have massive baths, and the Raj Suite has the most amazing Kohler overflow spa that takes an hour to fill - I know I've bathed in it! (B'day present from other half earlier this year, cant think of a better way to spend my 30th!).
The other one which meets your requirements is The Islington (http://www.islingtonhotel.com/). You could also consider some of the B&Bs around the Battery Point area. What are you planning to do? Remember things are alot further apart then you think down here.
If you want good places to eat let me know and I'll post you in the direction of some good food blogs and resturant websites. I have my favourites - some high end, some not so high end.

I travel to Hobart for business reguarly (and grew up in Tasmania), and have stayed in virtually every hotel in Hobart, and can confirm that Hobart is not really a town of fine hotels.
The hotel most likely to meet your needs is the Henry Jones Art Hotel, as Sailrob81 has suggested. This is a lovely hotel. The only downside is that it is down on the wharf (very nice situation and outlook), and it can be noisey at night from hoons doing wheelies on the roads down near the wharf.
Having tried the main other contenders (Wrest Point, Chancellor - both very worn - Wrest Point Tower is like something from the 1970s), the place I always stay at is Somerset on Salamanca, which are relatively new upmarket apartments on Salamanca. Very nice situation, and quiet. A consideration for you, although it is not a "hotel" with room service, etc.
My favourite hotel in Tasmania is the Sebel Launceston. Very nice hotel, with excellent service.

Clean, comfortable and safe are hotel ideals. The perks are secondary. Staying in Hobart is to serve as a base for exploring Tasmania in five days.

My favourite higher class resturant is Montys on Montpelier (www.montys.com.au). Modern food with good quality seasonal ingredients - menu changes monthly. The other half loves the chocolate pudding with blue cheese icecream. Its also got an AMAZING cheese board. Its a small resturant, seating about 48 when full. Bookings are recommended.
Good Chinese is expensive but Mee Wah in Sandy Bay is LOVELY. Their tasting menu is $95 for 8 courses.
Mid range is where Hobart suffers. Drunken Admiral and Mures both cater to the fishy ppl but are kind of tourist orientated.
Good Japanese requires a 10 minute drive out of town to Kawasamei at Moonah in Dickersons Arcade.
Cafe wise the best at the moment in my opinon is Pigeon Hole in West Hobart. Jay makes everything onsite and it shows. I totally recommend the Granola or the baked beans. The coffee is good as well.
There are lost of resturants on the North Hobart strip which cater to all tastes.

another one I would recommend is The grand chancellior which is a very good hotel and is in a good location. I know the managemnt there and they are very personal and use their own facilities in the hotel all the time.
In regards to Montys it is a great little restuarant which has got the best selection of cheeses I have ever seen, Hobart is know for its cheese and everywhere you go they offer you cheese with your meal.

Funny from what I have seen of the Grand Chancellor it does not do much for me. Very conference/corporate. But then I guess tahts me as a semi local (6 years and counting) not actually STAYING there.

Just returned from 5 days in Hobart. Tassie is a wonderful place and I hope to be fortunate enough to visit again someday. The people I met and talked to all take pride in their state and know they live in a world apart from that huge island country to the north ;)
I stayed at the Gattonside Heritage B&B on Sandy Bay Road in Hobart just a couple of blocks from the Battery Point village. Easy walk to Salamanca and the wharf; there is also a bus line in front of the house if you don't have a car.
I highly recommend this historic mansion as a place to stay; the couple (Nicole and John) that run it are friendly and knowledgable. Even better they are completly unobtrusive. I know for a fact that at least one of the rooms has a big jacuzzi tub in the bathroom. The bed was incredibly comfortable with luxury linens and fluffy pillows. And it was nice and quiet at night. You'll get a key to the front door as well as to your room; you can come and go as you please. Breakfast is cooked to order and you won't go away hungry. Complimentary Cadbury chocolates and port wine are available in the living room each evening if so desired.
