Central America - Honduras - Bay Islands?

Anybody have experience visiting the Bay Islands in the summer? We're thinking of going in July. Is that a good time, weather-wise?
What are your recommendations for:
Logistics (airport to use, transfers)
Places to stay
Places to eat
We would be very happy to lay on the beach, and do some snorkeling and kayaking. We are not scuba divers, and we don't need any nightlife at all (other than chilling out and having a drink).
Thanks!
We're actually headed there in early July! We're mostly divers, though, and will be headed to Anthony's Key Resort. CocoView Resort also gets good reviews for diving. We have a couple non-divers in our group, so I'll let you know how it is after we get back. However, you might want to consider something closer to the beaches in the West End.
We are connecting to TA/WC flights out of SAP-LCE-RTB.

CoCo View is indeed very nice. It's very hot & humid that time of year but if you're just going to dive and hang out doing water-based or low impact activities it's not too bad.
Paya Bay is on the other side of the island, VERY remote & secluded but also has full service dive shop and nice diving. If you want isolated, this is the spot...

The airport in the Bay Islands with the most service is undoubtedly Roatan (RTB). I second the suggestion for West End, though I have to say it was rather a backpacker destination when I visited (as a backpacker and diver) six years ago. They may have come up with some high-end options by now, but back then it was mostly hostels or low- to mid-range hotels.
I was there in August, and the weather was fine - though at the same time a hurricane was churning its way across Yucatan which could just as easily have turned south towards Honduras, so it all depends on your luck, I suppose.
EDIT: Oh, and upon reading Greg's trip report, I remembered something else. The bugs to worry about on Roatan are not mosquitos, they're sandflies. As the name implies, they're often found at the beach, and usually just before sunset. They don't carry any diseases or anything, but their bites itch like a &/(&%/(%$R.

Another good website for those considering a trip to RTB:

That typhoid shot hurt! We start taking our chloroquine this weekend.

should've taken the typhoid pill, no shot. I'll be down in Roatan in August to hopefully buy a piece of property to build a second home on. RE is going up down there, but I think the next two years will steady, and then it will boom again.
