Budget Travel - European low cost flights recommendation

On an upcoming trip, I want to fly from London to Spain (Madrid or Andalusia), then Spain to Paris, then Paris to Northern Italy (Venice/Florence/someplace nearby).

I have no objection to flying LCCs as long as they're reasonably reliable - I understand Easyjet and Vueling fall into this category. Are there any other carriers I should consider? Are there any 'hidden deals' on regular airlines I should be aware of?

I've flown Vueling around Europe. It's cheap (if you book in advance) and not bad at all for what you pay. Expect long lines if you don't check in on-line.
