South America - How much is a cab ride from LIM to historical center?

Specifically, the Sheraton there.

I would guess you'd be looking at $20 for that ride. I'm sure you can do it cheaper by negotiating outside the terminal building, but you're taking a risk if you do that. Better to stick with the "official" companies just past Customs.

When I was there a couple of years ago, there was a poster at the airport with usual taxi prices to various places. To catch our return flight, and after having a couple of glasses of sangria with dinner, I negotiated a price from Miraflores (further away than downtown) to the airport for what turned out to be about 25% of what I thought I was getting and way less than the usual fee.

The ride to downtown is S/.45 which is about $15 dollars. Returning to LIM they should charge no more than S/.30 which is about $10. These prices are the same for Miraflores but I am certain I remember the prices for downtown are the same.

I paid $18 using one of the inside the taxi terminal services from LIM to the El Prado Doubletree, Miraflores, 10 days ago. Cant imagine the Sheraton would be much different.
