If memory serves me right, one of the chefs came from the French Laundry. It's certainly the most sophisticated dining you'll find in Bali. Booking is essential. You can ask for either garden or verandah seating.

End of November I was in Bali--stayed at the Four Seasons Jimbaran Bay (outstanding, best in Bali) and then went to Four Seasons Sayan, in the jungle just outside Ubud.
I recommend a visit to the Four Seasons Sayan--which is set on a hillside overlooking rivers, a valley with rice paddies, jungle. It is an incredibly beautiful place to stay at... and dine at. I'd recommend lunch on the open terrace overlooking the verdant valley. The building is suspended above the jungle, totally open. Cuisine is excellent--Balinese and a variety of other dishes. Light and healthy. Dinner there, also very romantic, with a great sense of place with temple bells ringing in the darkness and frangipani flowers scenting the air.
Highly recommended. Most memorable.

A bit of a foodie myself, I was in Bali last month. Moziac was quite good, but it certainly didn't blow me away (it doesn't have anything on Charlie Trotter or Joel Robuchon, for example.) While you mentioned money is no object, you can buy a small Bali guide to restaurants and hotels in the Mozaic gift shop that includes a card giving discounts at a variety of hotels and restaurants, including Mozaic. I bought it while waiting for a table, and the discount at Mozaic for two was greater than the cost of the otherwise semi-useful book.

I did have one meal in Bali, a beach dinner at Amankila (http://www.amanresorts.com/home.aspx?id=296), that ranks among the top couple of meals I've had in my life. Not as much for the food, which was good but certainly not incredible, but for the entire experience. It may not make a lot of sense (or perhaps even be available) if you're not staying at Amankila (http://www.amanresorts.com/home.aspx?id=296), but I'd highly recommend it if you can swing it.

Dinner began earlier in the day when the chef came to our villa to discuss the menu we'd like. The sky is basically the limit, though we used the restaurant menu as a bit of a guide. We settled on a Balinese soup, live lobster tails, tuna sashimi, chicken satay, and a leaf-wrapped Balinese fish, among other things.

Arriving down to the Beach Club, which was closed to all other guests, our chef and attendants warmly welcomed us and the staff had built a large bonfire on the beach. Our table was surrounded by candles and placed just at the edge of the water; as the tide came in over the course of dinner, the water would kiss our feet as the waves rolled in. We were given a bell to summon our waiter if we needed anything, but were largely left alone otherwise. After dinner, we retired to a bale setup with candles on the beach, where we had dessert and lounged undisturbed (with the bell if we needed anything) while watching and listening to the waves.

A bit later, we went for a swim at the Amankila (http://www.amanresorts.com/home.aspx?id=296) Beach Club pool, which had also been surrounded with candles and reserved for our use.

Overall, an incredible experience, and reasonably priced at US$110/person ++

Dinner or lunch at any of the amanresorts on bali would be hard to beat. The amanresort hotels are the best there, better than the four seasons (jimbaran and sayan) and the food at Amandari and Amankila in particular is exceptional.

A six-course tasting menu is about 495,000 rupiah and another 350,000 for wine pairings. I never looked at the other menu, so can't recall prices for individual entrees.

Far from the white glove treatment; but, the most enjoyable dinner I have had in Bali was on Jimbaran Beach.

A few huts line the head of the beach with tables set out darn near to the water. You walk up to the huts, pick your catch (seafood mostly) heck give it a name first as it is all live, the freshly prepare and serve to you.

Super fun atmosphere, unique and excellent quality. To get the best price when the ask where you are staying, say some shack in Denpasar. They have different prices for each property and everything is negotiable as well. The Four Seasons menu is essentially everything with an extra one/two zero's on the back of the price :)

All in all, Bali is all about great food with an endless list of places to visit, from upscale to traditional Indo style dinning and everything in between. A love the restaurant on the beach just north of Ku-de-ta; but, never can remember the name. Ku-de-ta is quite the place in itself as is the Viet-French place in Sreminyak (brain fart on the name as well).

my understanding is that the F&B prices at Amanresorts are considerably better than FS, and the experience can be truly incredible.

OTOH while i seem to recall nonguests can have lunch/dinner and then use the beach club @ Amankila, im not sure about the beach dinner.

theres also another even more private dinner IIRC, dont remember which Aman property it was. think it was for guests only, because you had to option to spend the night at the place you had dinner.

the italian restaurant at Bvlgari might also be good for view and decor (contemporary).

The only aggregated reviews I could find for "Il Ristorante" are in Japanese (http://r.tabelog.com/tokyo/rstdtlrvw/13045135/) -- with four reviews, it gets an average of 3.0 out of 5, comments like "remarkably boring", "unexceptional", and an estimated dinner price for two of Y30,000 (~US$250).

Kagehitokiri, amandari and amanusa also accept non guests for lunch and dinner (reservations essential for dinner, not too easy though. I stayed at FS Jimbaran and tried to book a table at amanusa, no table available. i rang back and asked for the hotel manager , told him ive stayed there and at various amans, got table for my party !)
Amanwana does not accept day guests usually, but they make exceptions....I spotted a certain mr and mrs. B.Gates across from my table at lunch one day. They arrived for lunch and returned to their boat.
So I guess you can always try !

For International food you cannot go past Ku Da Ta at Seminyak, equally the Living Room just down the road.

For Seafood I would eat at Sanur, Benno's Beach side cafe located just along the beach from the Grand Bali Beach hotel , - walk thru the markets. Go at night when the markets are closed - the seafood skewers are awesome. Freshly cooked over coconut husks.

For Balinese food - the ultimate is "Bumbu Bali" on Jalan Pratama at Tangjung Benoa. Bookings are essential. The Austrian Chef Heinz is married to a Balinese lady and his food is totally authentic and awesome.

I have had some wonderful local food cooked for me in homes - Made - you are the best.

Warisan was very good, we had dinner there.

Another vote for Lotus cafè in Ubud; we reserved Mozaic, when we got to read the menu we really didn't feel like going, nouvelle couisine is not my piece of cake.

In Sanur, I went twice to Resto Ming, not far from the Bali Hyatt (Resort, which itself has a few good food options that we tried as our friends were staying there).

Had a sandwich and a drink at the Bulgari, by teh pool, great views, it's right on the cliff. Service is slow and nothing spectacular. Food was good.

I'd definitely second the recommendations and comments above for Mozaic (my favorite) and KuDeTa. We also had an excellent dinner at Ibah, also located in Ubud (it's been a few years since we ate at Ibah, though). The food and service at all three was excellent, although in my opinion the service at KuDeTa was slightly lower than Mozaic & Ibah. While the beach location of KuDeTa was wonderful, the settings for both Mozaic & Ibah were also beautiful.

I'll join in the recommendations for Mozaic. The food was excellent, the setting quite pretty. But I'll say that the atmosphere, particularly as contributed by other patrons (at least on the night we were there), is a but less fine-dining than the menu would suggest. You will see a fair number of people who look like tourists (I know, we're all tourists there, but then some of us look like tourists: tennis shoes, shorts, ballcaps, etc.) among the crowd. That was the only thing about Mozaic that I wasn't keen on, as it took a bit away from an otherwise special meal.

The food at Ku De Ta was okay, maybe even good. The setting was beautiful. The service was absolutely atrocious. I left a fierce note for the manager detailing many service lapses and vowed never to return.

The best overall meal I've had in Bali was at the Ritz Carlton, ironically enough because apart from this meal, the hotel's service levels and food were quite unimpressive. Anyway, we did the special all-lobster meal out on the jetty sticking into the sea right around sunset. The food was really great, our waiter took exceptionally good care of us, the setting was spectacular, and the live music at the end of the jetty near the shore made it an unforgettable place to spend my 30th birthday. I don't know if the RC still does that, but I'd be willing to bet that they do. You should book well in advance, because they only have capacity for one party (up to four people, maybe more in a pinch) per night.

Such an open ended question. My three cents are mentioned above with Jimbaran Beach, Naughty Nuri's, Kafe Warisan and agree with Ibu Oka and the Living Room.

I guess the key comes to what the OP is really looking for?? A meal with the ambiance thatcan be found elsewhere or something very unique to Bali in menu and dining experience.

I stay away from Mozaic as it really does not seperate itself from cuisine or ambiance that can be found throughout the globe.

No place other than Bali would present this challenge. The island is LOADED with amazing options. One would be well advise to just go forth and prosper. Dine well each night and chose for one self afterward.

Bali = Babi Guling if you wish a truly representative meal.

I have eaten at the Amankila (inkl. the great dinner at beach as described by someone else in this thread) and Four Seasons Jimbaran and can recommend these hotels for dining. In addition I would like to add the Ritz Carlton at Jimbaran. There is a fantastic thai restaurants (better thai-food than in thailand!), a japanese restaurant, a fish restaurant, a fusion restaurant and an italian restaurant + a balinese restaurant (in season). So much choice and so excellent that we really did not feel the need for leaving the resort during our 12 nights stay which a food junkie like myself would never have believed being possible.

Hi mikeef, yes I know it, and I agree about the chicken, I am always amazed when I read something here or elsewhere, that I thought nobody would ever know about this place, and they do. On the weekend, I was taken to Ming Resto in Sanur, french cooking on the side walk in Bali. There is a Ming, a character, I HAD to meet his son and his wife their children and her parents, you know what it's like, and the food was good. Well some of the sauces were a little bland, but not so much that you would complain, I put it down to the milk and cream which is predominately long life stuff, and the lack of any good commercially quanity cheese must be a problem. You make allowances, don't you, that's why I say it's good. Try it next trip, regards bkkrop

We ate at Mozaics last month. It was excellent, but it really is an international experience. Given our satisfaction with Naughty Nuris and the like and given the cost of Mozaic, we wished we had stayed more local in our choice.

We enjoyed the setting of Indus (http://www.casalunabali.com/), just outside the main part of Ubud – beautiful setting by gorge, best for lunch in order to see view.

We ate at WARUNG ENAK (http://www.warungenakbali.com/) on an earlier trip and thought it had interesting Indonesian dishes

We ran out of time to eat at highly recommended Bebek Bengil (http://www.agungraka.com/bebekbengil/) which specializes in crispy duck.

Be aware that WARUNG IBU OKA opens at noon and closes around 3 when all of their 5 or 6 pigs are consumed

Stop at Dewi Café, Ceking Rice Terraces, Tegallalang crafts village area for for the amazing view but NOT the food. It is best possible view of the tiered rice paddies. Be aware that ice is not made from purified water. I recommend drinking from a young coconut.

I really enjoyed SIP Wine Bar in Seminyak.
It's a hole in the wall compared to other establishments like Kafe Warisan and Ku De Ta, but the menu was delish and ambience very nice. It is French cuisine with a extensive wine list... with many wine choices costing upwards of 2-3000$!
Less expensive options are also available, and their food is very reasonably priced. The bathroom is also cleverly decorated and very fun. ;)

Also recommend Kafe Warisan as others have. oooh. EXCEPT, Kafe Warisan is changing names and moving locations in October...

Beds on the Beach at the Four Seasons Jimbaran is a unique and fun experience. Five course meal on the beach on a bed overlooking candlelit sand... it's very romantic. Calling it five courses is actually misleading as each course entails multiple tastings of various dishes. I think we tried about 20 different things!
