Fun and Prestige Collections are model reservable. There are a few others one-offs are as well, but if you definately want a specific model, choose from Fun or Prestige.

if you're dealing with a smaller location, you can also try calling the day of/or day beofre your pickup and request a specific model. sometimes they will try to hold the car for you. I've had luck at the local commuter airport near my home a few times.

I tried doing that in SNA.. had a PT Cruiser convertible reserved, but they didn't have it so they gave me a Toyota Solara convertible.

I've done it with a Mazda 6 at PBI. I think you have to always expand out the vehicle selections online beyond what they initially show. You then get to see the "specific car" choices if available at a location. I also thought that there was a place on the website at one point that showed what models were specifically reservable at a given location (but then again, maybe not).

I know there are a lot of people on this board who would be happy if they could just specifically exclude a certain type of car (like a Taurus) rather than selecting a specific make and model.
