I have booked the following trip AKL-TBU-APW-PPG-APW-AKL for next March.

Any suggestions on where to stay and what do with my family (2 Adults / 3 Children)?

I am having a lot of problems with American Samoa.

If it provides any guidance:
We are going to Samoa in November of this year with our daugthers aged 3 and 5. We opted for
1) The Airport Lodge - for one night as we have a late arrival from AKL
2) Savaii Lagoon on Savaii - due its beachfront location and fairly relaxed style, close to Le Lagoto - but much cheaper and you get to user Le Lagotos restaurant
3) Litia Sini on Upolu, due to beach front location on what is rumoered to be a very nice location.

Western Samoa needs a Holiday Inn Express or two :p. Probably still 20-30 years off, though Apia does have the McDonald's.

There seems to be a real gap in the midrange between the beach shacks and guesthouses and the places like Aggie Grey's. Seeing the fire-stick shows at Aggie's or elsewhere on the island night is a real must.

Seeing the Friday-night nightlife and a sort of get-drunk/cruise binge before police move in around midnight in Apia is another side of the island, though not for kids. It's like a Southern Bible Belt town the kids can't wait to get out of.

Most of the attractions are private and some are very poorly run; they'll take your money but not invest much in signs, guardrails or steps or other safety-related improvements. Some would not be allowed to operate as they do if they were in a place like the U.S. (To be fair, there are also a few good apples). The U.S. state department even specifically cautioned about the blowholes and not getting too close, since you could walk right up to them.

American Samoa supposedly has even worse value for money on lodgings.

That said, the islands are undeniably beautiful.
