I haven't been south in years, but am now planning a car trip in a week or two. I think I would like to spend one day/night in Tainan, and then move on to the Kending region for a few days. Any recommendations for interesting sites along the way, as well as loved hotels & restaurants would be appreciated.

Only in Tainan for a day....
If you are into historical sites Zoolandia - Dutch (Anping Castle Chinese) and the sister castle Chikan in Tainan City is pretty interesting.
If you are into temples there are so many that they all start looking like the same. The Five Concubines, Tsonggan Temple, Kaiyuan and there are many more.
Take a look at this site: http://tour.tncg.gov.tw/English/tourism/tr03_01.asp
Gives you some ideas anyway.
Food is great here. Everything is sweeter in taste then Taipei.
You do realize that in early February it does get nippy down here and I am not sure what is open during Chinese New Year.
If you have any questions just pm me.

Thanks. I will get the trip in before the New Year's tides start rising. In addition to historical sites, which I like, any tips on hot springs or hikes?

Kenting is very lonley during the week but very busy during the weekend. Its like it explodes with population, all trying to rest at the same time.
In Kenting there are lots of little hikes you can take. Again I will metion that it is going to be cold there. It will be quite windy.
The Kenting National Park is huge and lots to see. It is worth seeing the lighthouse at the very southern tip. You can take a day hike there if you like.

My wife and I love it there when it is warmer and we like it there during the week. All the amenities are not open but it is pleasantly quiet.

Cold, lonely, windswept seashore with nothing but a few beef-noodle stands to keep body and soul together. Sounds lovely. I'm used to the cold from living in Maine-Vermont. However, it does occur to me that local hotels do not have central heating and even cold-lovers need to warm up sometime; so, perhaps we'll wait till April. Thanks, again.

My good friends just got back from Kenting. They had a business meeting near there. They mentioned that it was really nippy but most of the newer motels have heating so they told me not to worry.
So if you decide to go. You should phone ahead to make sure the motel you go to has heat. Enjoy the beautiful scenery.

Also is driving, you can stop in the towns along the way, and try famous foods in each place such as Turkey noodle in Chaiyi, and coffin cake dish in Kaoshiung, and so on. Each city and city has its own special foods.
