Subject line says it all. I'm flying home for Christmas mid December and my itinerary specifies NZ18 for the NAN LAX leg of the trip. What aircraft is used on this route?

According to Amadeus.net, NZ18's operational days are Monday, Thursday and Saturday and services are operated by NZ's 767-300s.
Although, excuse my ignorance, haven't NZ placed 772s on the NAN or NAN-LAX route before (or going to)?

Not AFAIK. The 767s are still doing LAX via islands, AKL-islands, AKL-PER and some trans-tasman flights.
777s are only premium longhaul routes (plus some trans-tasman).
