I think I already know the answer to this, but thought I'd confirm with the experts :)

I am making a 10 room (single night) booking for a wedding party and paying for all the rooms... Would that count as 10 stays (my guess is no) in which case I should switch to 500 miles per stay double dip option (I have no status)...?

On the face of it, the 500 miles is your best option - unless the two most expensive room rates are more than $500 combined for Variable earning (1 mile/dollar). Hilton allows a second room for the purpose of earning base points, as well as for the Variable Miles/50% Points double-dip options; however, rooms 3 - 10 would be ineligible for any sort of "credit" whatsoever.

You can always see if you can make arrangements with the hotel, especially if they are giving you a discount on the room rate.

You can earn points for up to two rooms IF they are posted to the same folio, but only stay / day credit for one, an done airline miles award iirc.

"You may earn Base point credit for up to two rooms per stay, if all eligible charges for both rooms are paid on one folio. Base point credit will be earned for all eligible folio charges incurred on both rooms. Bonuses issued on Base points or total folio charges, including tier bonuses (15%, 25% or 50%, depending on member tier) and double or triple Base point promotions, will apply to the total Base point credit earned or folio charges incurred for both rooms."

There may be other conditions under which you can earn points for coordinating an event or booking a group - I'd check with HHonors or the hotel about the Event Planner Program - U.S., Canada and Caribbean.

Of course, you can pay the entire bill with your HHonors AMEX card and get more points... and do the work to get your reimbursement from company or guests.
