Why is getting the 500 points a crap shoot? Sometimes it post right with the regular stay points, other times days later, and sometimes not at all. I know I eventally get them if I am peristent, but why should I have to? Are we supposedly the "best" customers?

I apologize for your inconvenience, but there is really no set answer for this. It could be one of a hundred things, but probably is related to some kind of technical problem at some hotels. Other properties, the Westin Kuala Lumpur for instance, have to request these points to be added to your account manually, so there is often a three to five day lapse between when your stay posts and the amenity points arrive.

As such, the only way I know to fix it is to report any repeat offenders to Corporate Customer Service. It could be that the hotels in question are not aware that there is a problem and this will alert them to it. If it is a property that has to do manual requests, then they will be asked to tell you so you know going forward that there will be a delay.

Besides the helpful comments of "Starwood Lurker" above I would like to add that all programs have missed cues with postings of various point bonuses.
Starwood can't hold that as an exclusive :D

Although a chore the folks at SPG contact centers can easily request that it
be posted with a simple call to them.
May that always be the worst of your troubles in a program :)
