Never considered university accomodations for vacations, but some US colleges have more recently gone "upscale" and rentals during the "school off" season can be very reasonable. And some even make rooms available year-round.
A list of such types of accomodations and some basic information could prove very useful here:
In Dublin, Trinity College: http://www.tcd.ie/Conferences/visitor2.htm
In London, University College London: http://www.ucl.ac.uk/residences
In Honolulu, Hawaiian Mission Academy: http://www.hma4u.org/dormrental.asp
Poughkeepsie (Upstate), New York, Vassar: http://www.aavc.vassar.edu/house/accommodations.html
In Prague, Charles University: http://kam.cuni.cz/KAM-14.html (very basic rooms at around $12 per night.

The University of British Columbia Housing & Conferences also offers similar types of accomodations. They can range from 189.00 CAD for a couple in West Coast Suites to 50.00 CAD in a room with single beds. This is for a 1 night stay in mid-May.

I stayed at a residence room at the University of Western Ontario (my old alum mater) in the summer. I just contacted the housing department, and got a room for around $30 a night. It's clean, safe and provided breakfast. The residence I stayed was a 4 room apartment with a kitchen, so if I wanted to, I could have cooked dinner as well.
I assume that anytime in the summer you can contact the university housing department to see if any temporary rooms are available.

I started a similar thread a few months back that has some links in it:

I stayed at McGill U in Montreal ...
Ya, that would have been a great location ...... alas, I was there during school year, so it was full of students. Went to campus though, and that was quite lovely.
OTOH, it was a true budget trip, as I got CO EQMs for an amazingly low price when they matched a US Air sale (when they were desperate for cash, and before CO and others figured out that they didn't have to match the prices). Not a Mileage Run, because the taxes on flights to Canada pretty much kill that, but I've always wanted to visit Montreal. And got a very nice hotel next to Chinatown for about $30 per night via Priceline.
But I digress

To add to the list of Canadian universities...

I've stayed at various student dorms in the UK and they've been great. I like that they have sinks in the room - I never realised it would be so useful!
