I am having great difficuly finding a car hire company that will allow a one way rental from ADL => MEL for a convertible. We're planning on doing the trip in just over a months time and we had no idea that hiring a convertible for the journey would so difficult - any suggestions?

If renting for over a month a purchase/buyback scheme might be cost-effective. This is available for brand-new cars (presuming you want a Jag convertible or something nice like that) or for used cars at all price points (though more at the high and low end). One way rentals for specialty cars are a problem, and you usually wind up having to pay shipping back to the origin -- hence the high cost.

Doesn't surprise me in the least. Convertibles are a very rare beast in Australia, so your chances of finding any with a rental car outfit would be quite slim.
They are nowhere near as popular in Australia as they would be in Britain or the USA.

Thanks, so it looks like I'll have to hire a boring sedan :(
