Australia, New Zealand & the South Pacific - Need advice on Great Ocean Road portion of trip

As part of our 2-week trip in January, we currently have 3 days/2 nights scheduled to drive from Adelaide to Melbourne. While I'd prefer to have some flexibility in where we stop, I'm aware that accommodations will be at a premium due to the high-season.
So... with that said, can anyone post their ideal drive, with potential overnight stops along the way? Ideally looking for quaint B&B's.
We plan on leaving Adelaide around 9am on Day 1, and would like to arrive in Melbourne in the afternoon of Day 3. If it matters, this will all be done Wednesday-Friday.

Places I'd recommend along the Great Ocean Road:

Apollo Bay:
Patricks By The Sea (a quiet cottage, if its available... )

Lorne Hotel is nice - more boutique hotel than B&B, though.

The Cumberland, which can be pretty ordinary at times (IME), but it is central.

FWIW - I'd try to nail my accomodation as soon as possible... January is a big holiday month. Alot of people combine the first week (or two) with Xmas/Boxing Day/New Years for a long family holiday. At the other end of the month, you have Australia Day followed by school starting up on 30/1. If you wait too long, you may find it difficult...

Edited to add:
Personally, I'd do the Gold Kangaroo Service on "The Overland" train from Adelaide to Melbourne, and rent a car in Melbourne to see the GOR for the next two days.

Thanks for the info.

Your mention of the train got me wondering if, in our limited time in Oz, it might be best to fly from Adelaide to Melbourne, and spend 1 day driving the GOR from Melbourne (down and back in 1 day).

I know we'd miss a few things, but we'd see most of the Great Ocean Road, and instead of spending 3 days driving, we'd spend 1 day driving, and pick up a couple more days in Melbourne.

Any thoughts?

One additional option I'd like some advice/comments on (in addition to the previous post):

A portion of our OZ itinerary is essentially Adelaide to Melbourne to Cairns.

So, we could fly from Adelaide to Melbourne, and spend a couple days in the city. We could then spend a day driving the GOR, stopping along the way. We would spend the night somewhere in the Warnambool area. The next day we'd return to Melbourne Airport (either via the GOR or the the Princes Hwy) to catch a 4pm flight to Cairns.
