You don't indicate the port from where you are travelling to reach NZ, but as Sydney is less than 3 hrs flying time and having been to NZ more than 30 times I would suggest you select the city that best meets your needs for your next destination. You are not going to see too much in one day in any event. As you are on an international leg you will no doubt stop in Auckland which is the main transfer hub. As mentioned earlier, you won't see too much in one day so you might consider looking around the city for a while and then heading off to St Hillier (15 mins in taxi) where there are some great restaurants along the water front. Would be too much of a rush to see anything around the Bay of Island etc, however, you could hire a car and drive to Rotorua which from memory is only about 3 hrs which is where all the thermal pools etc are located.
No doubt you will receive further advice from Kiwiflyer and others who live in NZ, but I to see any other major city will involve a flight as you will only be there for one day that is the last thing you want.

I agree: There's no point trying to spend only one day in NZ. You might as well add the time to your previous or next destination and get more out of that.
