I have a friend who can pick me up for a quick bite to eat somewhere if there's anywhere good.
And how long does it take to get through security at, say, 3:00 pm-ish? Flying CO of course...

The majority of my flights have been between 7-9 am, but security moves along quite well. Only once did I have to wait more that 20 mins, and for no apparent reason. IAH is set out in the middle of nowhere, with mostly chain hotels and chain restautants close by, so I can't recommend any particular restautant as outstanding, with the possible exception being any barbeque place you might find- there are several local chains, the names of which I can't remember at the moment.
it takes FOREVER to get anywhere from IAH...

If you like good Tex-Mex, there's a branch of Pappasito's by the Dearbrook Mall, near the intersection of the Eastex Freeway (US59) and FM1960 - I think it's about 8 to 10 miles from the CO Terminals:

You won't have a problem with security at 3:00p, and actually the lines move pretty quickly these days.
As for dining, not much in the area that I would travel out of the airport for. There are several eateries in the airport, and the new President's Club [CO] in Terminal E is quite nice. I use it regularly.
