I've experienced this.
What makes it interesting is that for stalls that serve dishes from a particular region of Vietnam (i.e. North, Central, South) they also wear the attire as well as service you in the same customary manner that corresponds accordingly to that region.
Great atmosphere for get-togethers with family and/or friends.
