I want to spend 3-5 days at a resort in a very relaxing, peaceful location in Northern Europe (north of Switzerland) in Spetember with my wife and 7 month old baby. Resorts are obviously not as common in Northern Europe as they are in Hawaii so they are proving to be a little difficult to find. Can anyone offer any recommendations?

There are some very nice resorts in northern France (Le Touquet)as well as the north sea coast of Belgium (Knokke, very close to Brugges as well) and the Netherlands (Zandvoort), Non of these resorts are anything like Hawaii. If you want to travel a little further and see something unique you could head for Parnu in Estonia.

How luxurious? How far north?
I stayed at Hotel Fano Badeland several years ago. It is on the island of Fano on the west coast of Denmark. It is kind of minimialist architecturally, but is adjacent to a nice beach, golf course, has a sports building, spa & indoor water pool/water park area. Lots of families there.
The island has several quaint & interesting villages, and is visited mostly by european tourists--I don't think I encountered an other american during my time there. I really enjoyed it, and would love to go back again.
