We will be going to the Gold Coast for a golf trip from 19 to 23 July. What kind of weather should we pack for? We'll be coming from balmy Singapore.

Days should be 20 deg C +/- 3 or 4 : it is possible to have "warm" weeks or cool weeks, but it will probably average around 20.
Nights will be cooler - averaging just below 10, with about the same variation as above.
So pack warm for the evenings, but it should be very pleasant weather for days filled with golf, with low humidity, pleasant temperatures, and plenty of sun. July is usually dry in Queensland, but I'm told by friends that this winter has been rather wetter than usual so far.
