Australia, New Zealand & the South Pacific - Any restaurant recommendations for Launceston, Hobart, or Brisbane?

Subject line says it all...
We'll be in Launceston 3 nights (before, after, and in between Overland Track and Bay of Fires treks), Hobart for 2 (I think), and BNE for one (our last night in Oz, on the way back from Lizard Island).

For BNE, especially if you are staying out towards the airport side of town, Baguette (http://www.baguette.com.au/)would be a very fitting end to your Australian holiday (link contains current menu).

And even if you're not airport side of town, it's well worth the trip...
