Looking for GOLDs to comment on upgrade percentage when flying standby. Thanks.

Very poor, except on red-eyes or Saturdays. Calling first can help you tell if it's possible but only the day of the flight, after Silvers are upgraded.

I only tried it 4 times when I was silver and gold. Got the upgrade on 3 of those.
