A tip for those concerned about the buffet: you can order food to be brought to you straight from the kitchen. They've been quite pleased to do so in the past (and they make very good sushi to order, within reason) and I imagine this would be even more so the case now. Their rack of lamb is also excellent, though I suspect it varies from day to day, as are the poached fish. Think of the buffet as a showcase of what is available -- you don't have to eat from it.

i was told the menu changes 10 times per month - every three days.

I always felt a bit bad asking for something special, and while I know the staff wouldn't mind -- they have such a great attitude! -- I could never get past this.
As to the sushi, any particular options to bear in mind when ordering? Do you have a sense of what's available? It's hard to know what to order when there's no menu!...

This is the F class buffet/sit down area, right?
I never knew about the sushi! only on occasion would I see it out.

Don't forget that you may order noodles from the Noodle Bar too. The staff in the F class Dining Area will be more than happy to tell you the day's specials. But unfortunately some people require visual presentation before they could decide.
FYI - the catering at the Wing is provided by the Peninsular Hotel Group and not CX themselves.
Isn't the whole kit at The Wing/Pier contracted out to the Peninsula Group, from catering to the people who keep guard over the Cabanas? I understood that the only CX personnel are the supervisors and CSA's on duty.

THey will also make you something easy if they have the ingredients - for example, I had a strange omelet crazy one evening before leaving for LHR - no problem
