I happen to have 2 CX menus (F TPE-NRT and C HKG-DPS) and they illustrate the difference between F and C quality level, also address the "bad western food out of HKG" thread. The TPE-NRT meal is actually boarded in HKG.
I've omitted 1/2 of the menu but I think it is a fair comparison:
F dinner:
Savouries (no caviar tpe-nrt, only hkg-nrt)
smoked and marinated salmon with lobster
marseille fish soup with herb bread slices
grilled beef filet with armagnac sauce, or
steamed eel with bean curd, or
chicken with black bean sauce
cheese,fruit,pralines
melon ice cream in musk melon with passionfruit sauce (very, very good!!!!)

C menu:
seasonal salad
salmon timbale with grilled vegetables
seafood in curry, or
grilled beef tenderloin in wafu sauce, or
braised chicken and black fungus
almond apple pie with ice cream
cheese or fruit and pralines

Both meals were excellent. Also pretty representative of CX service. Far from the best (HKG-NRT menu is noticably more elaborate and expensive, reflecting an attempt to lure the Japanese F business).

The longer flights (US/Europe) have more elaborate food. Similar difference between F and C. C is good, but to say the food is similar in F is to severely mis-represent it. And this is ignoring the better amenities in F (but you get the idea).

And doesn't this put their partner American Airlines to shame when CX can serve a 4 course full meal in all classes between TPE-HKG (about 1.5hrs) and AA can't even get their peanuts together on a flight over 3 hours? Oh yeah, they do serve only peanuts now!

I was on an Avianca flight for a total flying time of 40 minutes and got a full hot breakfast---in coach!

Right. Though CX gets lots more revenue per seat than does AA on a flight of comparable length. (Not to confuse cause and effect, though. Maybe the high quality catering causes the high revenue, rather than vice versa!) And it's not as if AA can't provide meals more than it does now; it's that AA has decided not to.

That's why CX is one of the best carrier in the world. No matter how you look at it, HKG-TPE is a very short flight. Some would even argue that it could pass for the only 'domestic route' that CX has.

The price of First/Business class tickets between HKG-TPE is peanuts when compared to a full-fare ticket within the U.S. In other words, these premium cabins are much more reasonably priced within Asia such that their profit margin is actually lower but yet they manage much better quality of service.

CX has the odd First Class dinner service to Singapore. I've flown both on CX and SQ recently and can say that caviar showed up only once - and it was on the SQ flight. (Though a tad stingy).

Both flights had soup, salad and mains. CX's had better food choices and quality. SQ looked like it was dished out en masse.

Its a pity that CX doesn't offer more flights with First Class to Singapore. There is justification for revenue there. CX wonders why their once a week inconsistent flights with First Class doesn't get filled out. Hmmm I think I've just answered their question.
