He says 3 days before it's first feed and split. Perhaps it creates a microclimate with just enough air in it to keep it going in a concentrate way? I guess I'll know soon. I'll probably not resist sniffing it every day ...... sparkchaser Aug 28, 12, 5:27 am My only real point of reference for starter storage is the starter than an ex-gf of mine kept. She is a pastry chef (an amazing one at that) and when we met she had been maintaining her starter for 7 years or so. She kept it in a 5 gallon bucket with a loose lid. I'd ask him about it, but he doesn't remember :( I see there are plenty of recipes on the web, but I can't recommend one from experience. I just remember that there was something really good about the sourdough flavor in pancakes and waffles where regular pancakes/waffles were just sweet.
