I am currently in first class on an A330 IAD-FRA. I am travelling on a day that the 747-800 doesn't fly or else I wouldn't be asking this question :)

Does it make sense to try to switch my flight from an A330 to a 747 given that it is probably not an upgraded 747? I would have to pay an award change fee I think, so before I shell out the $$, I wanted to see if there would be any substantial difference between the two?

The 747-400 (even if not converted) gives you a bed in addition to the seat. So yes, I would pay for a change.

The OP is asking about 748 :)

I personally would change if you are really flexible just to experience the New product but there is no Real urge

 The OP knows it won't be a 748 on the day.

I think you'll get an old seat and no mattress on the A330 and two old seats plus a mattress on the 744.

Isn't it also likely that they send a B744 with a refurbished F on the day they don't operate the B748 to at least habe the top product in F on that route? I'd pay for the change...

I was thinking the same thing, but from the thread on where the newly refurbished 744s are flying, none of them seem to be on the IAD-FRA leg. So, I am just going to assume it will be an old First.

But, I agree, I will pay the $$ and hope that for some miraculous reason they use an upgraded 744. Now I just have to wait for two seats to open up...

If you have the flexibility to wait, go for it. But having flown in the "old" F on the 330, it is far superior to ANY Int'l F on a domestic US airline. You will get the menu and service regardless of which you pick and I found the "bed" quite comfy.
