We stayed here for 2 nights on our last visit to Italy several years ago, enjoyed the town and the hotel greatly. Looking for an update on the hotel in assaying a revisit.
Sorry I have no firsthand info, but wanted to at least reply with something that might be of use.
Just in case you haven't already checked these:
Venere's reviews (http://www.venere.com/hotels/civitella-agliano/hotel-la-tana-dell-istrice/#reviews) are old (currently the last review is from 2009) but Tripadvisor (http://www.tripadvisor.com/Hotel_Review-g194950-d311682-Reviews-La_Tana_dell_Istrice-Viterbo_Province_of_Viterbo_Lazio.html) has new ones.
I see mention of this place on Slowtravel (http://slowtalk.com/groupee/forums/a/frm/f/862600685) - I'd suggest starting a new thread there asking for recent updates. These following closed ST threads mention La Tana dell"Istrice (the specific post will be seen at the top of the page), and though they're old posts I thought perhaps you'd find them of interest:

It has been a while since I have been (so I won't really help the OP) but just wanted to comment that I have very fond memories of this little town (trying to get the car up that hill), great dinner, tour of the winery and little special towns nearby like Bagnoreggio. Unless the family falls apart (which happens) I would figure it is still great. The father Sergio seemed young to me so hopefully all is progressing well.
