Hi, apologies if this has been posted; I don't find anything similar.
I'll be traveling from Heidelberg to Frankfurt on the RB and would like to make a brief stop-over (4-5 hours; not over-night) along the way in one of the wine towns. Is that allowed on a one-way ticket? Thank you
Should be no problem as long as its the same day on regional trains.
You can even enter the stopover at bahn.de or when buying the ticket at the machine if you want proof.

you can book up to 48h stopover on a one-way ticket without any problem. :) I've been doing that very often ...

If you have a fully-flexible ticket for a route longer than 100 km, you may insert an unlimited number of (spontaneous) stopovers, even on IC/ICE trains. Only restriction is that you need to finish your journey within two days (the two days when your ticket is valid are printed on your ticket) or on the same day if you hold a ticket for less than 100 km.
If you're travelling on regional trains, you may even insert a spontaneous stopover when travelling on a restricted ticket (as long as you are still able to catch your booked long distance trains).
However, no spontaneous stopovers while travelling on long-distance trains on a restricted ticket.
