I just finished the Plat challenge and got my card which says it's valid until 02/14. This year I'm going to end up with 80-90 nights. Will this extend my Plat membership until 02/15? Or roll over all nights? Or will my nights for this year don't do anything and the status still expire 02/14?

They gave you Plat immediately and a challenge so you can retain Plat and give Marriott your business and eventually earn Plat on your own and thus giving Marriott more of your business.

75 nights earned this year will give you Plat through 02/14. You don't get rewarded a second time for taking a shortcut as your reward was the Plat challenge. Any nights over 75 this year will rollover to next year less any nights that rolled over last year.

A total of 75 nights next year including rollover nights, stayed nights, and CC earned nights will give you status until 02/15. Repeat for subsequent years.

Seriously, I will probably have ZERO Marriott nights in 2013 due to job change, but around 600k points to burn over the next years. So it is a little bit of relevance to me.

If it helps ease your worries, most people find that there is absolutely no difference between gold and platinum - and you "only" need 50 nights for gold. Also from what I'm told, Marriott gives you a soft landing. So if your plat expires on 02/14, you'll be gold until 02/15.
