Just completed a 11-hour flight LAX-NRT on their newly-configured 773 in Y class. Bearing in mind that the flight departs just after lunch at 1pm (thereabouts), and lands +1day at 4pm (thereabouts), a full meal (grilled salmon, and cold soba on the side) is served just after departure, but nothing in between until 2 hours before landing with what I consider as half-a-meal snack-sized serving of pasta.

Asked for noodles about 5 hours into the flight, and was told they don't carry any. Instead was given small packets of japanese snacks and a frozen banana to snack on. Found a snack bar set up in the galley with the same snacks and frozen bananas.

Not good... :(

That's lousy. I always think of NRT as a meal+snack flight. From LAX, I could see just one meal, but in that case I'd think you would serve it in the middle, not at the start. Thinking about it, even the meal+snack flights doesn't serve the meal at the start.

ANA has implemented a "My choice" program for most domestic and international flights in Y. It is basically a buy on board program for Y passengers, and you can purchase udon or some kind of noodles (same kind served to J passengers) and other heartier snacks.

I believe all airlines flying the LAX/SFO to NRT flights have the same full meal after takeoff and a light meal prior to landing in Y. The only differences are that some airlines are more generous with snacks - SQ is really good when it comes to snacks in Y, as well JAL. However I believe non of them offer particular heartier snacks like sandwiches (except SQ) and cup noodles any more.

It is even worst for those flying the redeye servies to Haneda from LAX (vice versa), ANA only serves you cold sandwiches after takeoff and a hot meal prior to landing. Same applied to the longer Haneda to Frankfurt flight. ANA claims passengers are not hungry at 1am.

Sure, the sandwiches on LAX-HND are indeed terrible but I think the current setup is fine. If you serve a more substantial meal post-takeoff, you're looking at around 2:00am at the earliest to have the cabin lights dimmed, not to mention people wanting their tray tables cleared. I'm also not sure who is that hungry at 1am. I've been on this flight a few times and also made sure to have dinner prior to flying.
