How do you "make it" route via IAH and DEN? Using .com, I only can get, at most, is SMF-DEN-ORD-DSM.

Say what you want about .bomb, but at least it could price a multi-segment itinerary correctly without having to click through each flight.

Yes, and before that, you may want to try ITA "see calendar for lowest fares" and specify the routings (ua iah ua den ua) and number of nights so you can find out easily what days the G fares are still available.
