I leave 3 hours later on OS airlines J class. I have never connected at CDG.
What is the best way to tackle this? Is there an internal transfer one can use? how long does it take?
Or should I clear customs and head outdoors to have a smoke?
What lounges would be best for me to use?

Don't count of TG staffs at CDG despite you fly F. TG always arrive at CDG Terminal 1 (T1). You'll have to pass border control, collact your luggage and clear your custom (Douane) here at CDG T1.
Austrian Airlines depart/arrive from/at CDG Terminal 2D. Terminal 2 consists of seven terminals: 2A, 2B, 2C, 2D, 2E, 2F, 2G. You will have to take the elevator when you exit custom (Douane) at T1 down to the basement level and take CDGVAL (Charles de Gaulle Véhicule Automatique Léger) from T1 to T2 (passing Parking PR, T3 Roissypole, Parking PX, then CDG T2 Gare TGV).
You then take escalator up, follow the sign to T2D walk to the end of the terminal where you will see the small Austrian Airlines office box on your right hand, and the check in area your left. If you have issue/question with your OS ticket you better doing there before you proceed to the check-in area. There will be no OS staffs at the check-in there.
Show your boarding pass or trip itinerary to the control. When he/she let you in the check-in area, then you will see check-in counter. Once you receive your boarding pass, you can go to the lounge in the middle of the hall. It will be the Air France lounge. If you go there without Air France boarding pass lounge dragons will reject your entry.
The reason why there and Air France lounge is that OS (*A) has signed code share agreements with AF (Skyteam) for 10+ year ago (Paris-Vienna routing). If you are lucky, you will get OS operated flight, if you are less lucky you will get Air France operated flight.
AF Lounge has nothing fancy in the morning. Lunch time there will be two type of soup just for amuse-bouche. If you have a guest, you can still invite your guest in the Air France lounge with you if he flying on the same OS flight.
I always quit the lounge 15 minutes before boarding. If you boarding pass has 'Sky Priority' then you can use fast track, if not you may need to quit sooner. Security checking process is usually take more time than other terminals, especially in the morning.
I hope this information will help transit to your next flight at CDG smoothly.

What is the reasoning that I cannot through check my baggage all the way through from Sydney? And just transfer internally at CDG?
When Ive done this on TG to Swiss transiting Zurich and onwards on to Vienna, I haven't had to claim baggage and re check it all.

This is a large airport and each of these terminals is a large building on its own. It's not as easy as walking across a hallway to get to your next terminal... despite that, it's completely do able in 3 hours.

You might be able to check it through but since you have 3 hours I would not recommend it, as CDG is infamous for loosing luguage. Something I never worry about in MUC, ZRH or VIE for example...

No. It is definitely from 2D. If your flight to VIE leaves on a weekday, after the morning rush hour, you can enjoy a Clarins treatment in a small room within the lounge.

I know it's from T2D, I'm purely saying that oliver2002's assertion that T1 and T2D couldn't be further apart for a Transfer isn't quite true.
In fact, any transfer to/from 2G (with the exception of to 2E, though not vice versa) is a nightmare, even 2G to 2G is a pain.

Just wanted to add that it is most definitely possible to have luggage transferred between CDG1 and 2! As long as TG checks the bags through to VIE at the OP's departure airport, they will be shuttled between terminals by the ground handlers - happens all the time. No need to pickup and re-check.
The biggest pain in this transfer is the light rail shuttle ride between CDG1 and the TGV train station at CDG2, and the ensuing longish walk to terminal 2D - there are moving sidewalks though. Not a big deal at all in my book, especially with a 3-hour layover.
