From 12 AM-3 AM which are the best local Hawker Centres have the most stalls open preferably in the downtown area?

My brain just exploded thinking of the ~possibilities~, but honestly? I would hop on a cab and ask the uncle which of his favourite hawker centres are open and what to have at said hawker centre. Even if it's during the day and you're not heading there at that time.
There used to be this food show that compiles votes for hawker stalls from both public and taxi uncles. We trust them quite a bit actually, and they know some of the better stores that us mere mortals do not.
Anyway, generally at that time I don't frequent hawker centres. I usually check out the main street near Geylang and have late-night dim-sum or beef hor-fun. YUMMY!
p/s: During the day for hawker food, surprisingly I enjoyed the tourist trap that is the hawker food place near Singapore Flyer. Not the best, but a very good general guide to local food without turning up in a random hawker centre to find 90% of the stores closed.
